These waffles are anything but basic, but not to worry, the recipe is fairly simple!
Recipe makes 8 Mini Waffles!
Make sure to separate your wet & dry ingredients before mixing!
1/2 Cup Pumpkin Puree
1/2 Cup Coconut Oil
2 Tablespoons Maple Syrup
1 1/2 Cups Almond Milk
1 1/2 Tablespoons Apple Cider Vinegar
1 Teaspoon Vanilla Extract
2 Cups Oat Flour
2 Tablespoons Ground Flax Seed
2 Teaspoons Cinnamon
1/2 Teaspoon Nutmeg
2 1/2 Teaspoon Baking Powder
1/2 Teaspoon Sea Salt
Combine the ingredients in separate bowls (wet & dry) before mixing them together in the same bowl to finish the batter.
Once a smooth batter consistency is achieved, grease up your waffle iron with cooking spray (we like to use a coconut oil spray!), and load that iron up with your batter. After about 2 minutes, your waffle will be cooked thoroughly and ready to enjoy!
Go wild with the toppings! The waffles go amazing specifically with the Bourbon Maple Syrup and some fresh Pecans!
